Sunday Brunch Ideas
While most of us down a smoothie or toast and coffee on our way out the door during the week, weekends are meant for enjoying a relaxing breakfast. The crust is stirred together with a fork and patted into a pie plate! It’s that simple.
1 cup all-purpose flour
½ tsp salt
¼ cup of oil
In a medium size bowl, using a fork, combine flour and salt. Add the oil, sour cream and stir until the mixture forms a dough. Place the dough into a 9 inch pie plate and use your fingers to spread the dough to fill the bottom of the pan and about half way up the sides of the pie plate. Bake in a 400 degree Fahrenheit oven for 10 minutes until slightly browned. Crust may shrink slightly.
6 slices of cooked bacon, chopped into small bite-sizes pieces
½ cup sliced mushrooms
½ cup chopped green or red pepper
1 cup grated non-dairy cheddar or Swiss cheese (plus more for topping) OR 1 package of TOFUTTI® BETTER THAN CREAM CHEESE®, softened
1 cup of TOFUTTI® SOUR SUPREME®
½ tsp each of salt and pepper
In large bowl or stand up mixer, beat eggs, sour cream, seasonings together until blended. Add cooked bacon pieces and vegetables and stir with fork. Fold in grated non-dairy cheese or TOFUTTI® BETTER THAN CREAM CHEESE. Pour mixture into baked pie shell. Place pie plate on cookie tray. Top with more shredded non-dairy cheese, if using. Sprinkle with some dried parsley. Reduce oven heat to 350 degrees Fahrenheit and bake for approximately 35 minutes or until firm.
