Merry Cherry Holiday Cheesecake and Cherry/Chocolate Non-Dairy Ice Cream Parfait
This truly is a wonderful time of the year to gather together family and friends and celebrate the holidays. No matter what the occasion, these luscious cherry desserts are the perfect adornment to your holiday table. Just don’t expect leftovers!
Merry Cherry Holiday Cheesecake
1/4 cup non-dairy butter
1/3 cup sugar
1 ½ cup of graham cracker crumbs
3 Tbsp water
Mix together with a fork or in a food processor until smooth. Press mixture into the bottom of the pan, covering the bottom as well as ¾ of the way up the sides of the pan. Bake crust in a preheated 350 degree F oven for 10 to 12 minutes or until lightly browned. Set aside to cool
2 containers of TOFUTTI BETTER THAN CREAM CHEESE®
¼ cup icing sugar (or granulated sugar)
¼ cup TOFUTTI SOUR SUPREME®
Beat above ingredients until thick and creamy but spreadable. Spread prepared filling over the cooled crust.
Spread one large can of cherry pie filling over top of crust. Chill for one hour and serve.
Cherries and Chocolate Non-Dairy Ice Cream Parfait with Chocolate Sprinkles
What could be more satisfying than sweet cherries over creamy ice cream topped with chocolate sprinkles? It’s just the type of dessert that brings back childhood memories.
1 Tbsp cooled hot chocolate or 1 Tbsp cooled coffee
6-oz of semi-sweet chocolate
2 Tbsp chocolate sprinkles
6 lady finger cookies
1- 16 oz jar or can of dark pitted cherries
1 container of TOFUTTI PREMIUM® non-dairy frozen dessert
Prepare coffee or hot chocolate and let cool. In a small bowl, dip the lady fingers in the cooled hot chocolate or coffee and crumble moistened cookies into the bottom of six small dessert dishes or clear glass mugs or wine glasses. Drain the cherries reserving the juice for another use. Spoon the cherries over the cookie base. Save a few cherries for garnish. Chop the chocolate finely with a large kitchen knife and sprinkle pieces over the cherries. Spoon TOFUTTI PREMIUM® non-dairy frozen dessert to fill glasses or dessert dishes. Dust with chocolate sprinkles and garnish with additional cherries. Serve immediately.
