There are plenty of Canada flags flying on Canada Day and more and more people are wearing red and white to celebrate this great country of ours.  Canada Day is about enjoying friends and family and perhaps attending a Canada Day festival or fireworks show, or having a special brunch, BBQ or a picnic at home or the cottage.  Here are some “Canadian” food ideas to add to the celebrations.

 

BBQ Back Bacon, Eh?

Did you know you can barbecue Canadian back bacon (peameal bacon)? It is fabulous and once you try, and it could become the only way you cook back bacon! Buy pre-sliced peameal bacon in a package, preheat the barbecue and place slices on the grill (or on one of those new BBQ grill mats).  Grill for about 2-3 minutes and flip the slices and grill the other side for an additional 2-3 minutes. Serve alongside fried or scrambled eggs. For lunch or dinner, grill the back bacon alongside slices of fresh pineapple. Place the bacon and pineapple on a hamburger bun and spread with TOFUTTI Better Than Cream Cheese

 

Canada Day Berry Cobbler

5 cups of mixed fresh fruit including blueberries, strawberries, cherries or raspberries

½ cup sugar

¼ cup all-purpose flour

Topping:

1 ¾ cups of flour

¼ cup sugar

2 tsp baking powder

¼ tsp salt

1/3 cup softened non-dairy butter or coconut oil

¾ cup SOUR SUPREME®

Serve with Vanilla TOFUTTI PREMIUM® non-dairy frozen dessert

In a large pot, add the berries, sugar and the flour, stir.  Heat over medium, gently stirring until berry mixture starts to thicken slightly. Pour fruit mixture into an oven-proof 9 x 12” baking dish and set aside.

 

Topping: in the large bowl of a stand mixer with paddle attachment (or in a large bowl using a pastry blender), mix together the flour, sugar, baking powder and salt.  Cut in the soft non-dairy butter or coconut oil and SOUR SUPREME® until mixture becomes moistened.  Using a large spoon, drop large spoonfuls of the topping into the fruit mixture. Place baking dish or cookie tray and bake for approximately 45 minutes.  Serve warm with scoops of cold vanilla flavoured TOFUTTI PREMIUM® non-dairy frozen dessert.
