As every host knows, today we need to be concerned with our guests’ dietary restrictions. It’s always a good idea to ask guests ahead of time if they have dietary restrictions or allergies. Christmas Dinner Menu: Creamy Lobster Chowder, Roast Turkey and Stuffing, Mashed Potatoes with Herbed ‘Cream Cheese’, baked squash, steamed asparagus and Upside Down Cranberry Cake

 

Creamy Lobster Chowder

8 slices of bacon, cooked and crumbled

2 Tbsp olive oil

1 large red onion, peeled and diced

4 potatoes, peeled and diced

6 cups of chicken stock

¼ cup of flour

2 Tbsp of water

3 cups of cooked lobster meat, chopped (canned or frozen)

Green onion sliced finely

1 container of SOUR SUPREME®. Cook bacon in a frying pan or in the microwave. Cool and cut into small pieces. Set aside. In a large stock pot heat 2 Tbsp of olive oil. Add diced onion and cubed potatoes. Cook and stir for 5 minutes. Add stock and cover with a lid. Cook on low heat for 35 minutes or until potatoes are soft and cooked through. In a measuring cup add flour and water and stir. Bring soup to a boil and add flour mixture and stir until soup thickens. Gently add lobster and stir. Heat through about five minutes and serve in soup bowls with 1 Tbsp of SOUR SUPREME® on top and diced green onion.

Mashed Potatoes with Herbed ‘Cream Cheese’

Yes, mashed potatoes can be dairy free! You will not sacrifice the taste of those traditional mashed potatoes as our version looks and tastes like the real thing, but are made with dairy-free TOFUTTI Better Than Cream Cheese

6 large Yukon Gold potatoes

1 container of Garlic & Herb TOFUTTI Better Than Cream Cheese

1 clove of garlic, minced

2 tsp salt

In a large pot, add potatoes, garlic, salt and fill the pot half way with cold water. Boil, then reduce heat and cook for approximately 45 minutes or until potatoes are fork tender. Drain the potatoes but reserve 2 Tbsp of the potato water in the pot. Add theTOFUTTI Better Than Cream Cheese and stir. Using a hand mixer, whip potatoes, water and the “cream cheese” until creamy. Other flavours of the “cream cheese” can be substituted, including Plain, French Onion and Herbs & Chives.

 

Upside Down Cranberry Cake

Base: 2 cups of fresh cranberries (or frozen) and 1 cup of sugar

Cake Layer:

1 ½ cups flour

1 cup sugar

1 ½ tsp baking power

½ tsp salt

2/3 cup milk

¼ cup vegetable oil

1 tsp vanilla

1 egg or non-dairy egg substitute

1 container of Vanilla TOFUTTI PREMIUM® non-dairy frozen dessert

Preheat oven to 350 degrees F. Grease an 8 to 10-inch round cake pan. In a bowl, mix cranberries with sugar. Pour into cake pan. Set aside. In bowl of a stand mixer, add sugar, egg, vanilla, oil and cream together. In bowl, stir together flour, baking powder and salt and add to mixer bowl and blend again. Pour batter over fruit and bake for 50 minutes or until toothpick inserted into cake comes out clean. Run a knife around the edge of the cake, invert cake onto a large plate or cake platter and carefully remove the cake from the pan. Serve warm with cold, creamy TOFUTTI PREMIUM® non-dairy frozen dessert
