Homemade Loaded Nachos

 

Nachos:

1 package large, round tortillas

1 tbsp olive oil

1 can black beans, drained

Handful of cherry tomatoes, sliced in half

1/2 cup Tofutti Sour Supreme

 

Meat filling:

1 lb lean ground beef or meat alternative

 

Veggie filling:

1 each red, green and yellow pepper

1 large red onion, sliced

1 tsp olive oil

 

Guacamole:

2 ripe avocados

2 tsp lemon juice

1/2 tsp salt

Pepper, to taste

2 cloves garlic, minced

4 tbsp Tofutti Better Than Cream Cheese

 

To make homemade tortilla chips, place a stack of six tortillas on a cutting board. Slice the tortillas into six pie-shaped wedges. Preheat oven to 350 F (175 C). Pour 1 tbsp olive oil into a small bowl. Using a basting brush, brush the tops of each wedge and place wedges on a cookie tray. Bake wedges for approximately 5 minutes, until lightly browned – watch carefully, as they can burn quickly. Remove from oven and place onto a big serving plate.

 

To make meat filling, in a large frying pan, brown ground beef until cooked through. Cover to keep warm.

 

For the veggie filling, in a separate frying pan, add 1 tsp oil and quickly sauté onion and peppers until lightly browned and slightly soft. Cover to keep warm.

 

To make guacamole: Peel avocados, remove pits, place pieces in a mixing bowl and mash with a fork. Add lemon juice, salt and pepper, and minced garlic and mash again. Add Tofutti Better Than Cream Cheese. Mash again until creamy.

 

Open and drain can of beans. Place in a bowl and microwave for 1 to 2 minutes, until heated through.

 

Top baked tortilla wedges with the meat and/or veggie fillings. Top with the beans, tomatoes and a good portion of guacamole. Top with the Tofutti Sour Supreme.

Tortilla “Cream Cheese” Spirals

 

1 package round tortillas

1 package Tofutti Better Than Cream Cheese

6 slices lean turkey (optional)

1 jar gherkin pickles

 

Place tortillas on a cutting board. Spread with Tofutti Better Than Cream Cheese.

Place one slice turkey on each round (optional). Place two or three gherkin pickles in a row near the edge of the wrap. Roll tightly with fingers. Secure with toothpicks. Wrap in plastic wrap. Just before serving, remove wrap and toothpicks and, using a sharp knife, cut into 2- or 3-inch slices and serve.
